Hello Viewers Welcome back to prathus food. Today I am posting a dish with continental touch. Last week I had a stock of little over ripened pine - apple which was not that good in taste to consume directly, but I didn't wanna throw that thought of making spicy pineapples, grilled pine apple, pine apple kesari but was not convinced, then got an idea to turn into some dish by combining pine-apple, sweet corn, searched for a good recipe then mixed up 2 r 3 recipes according to available ingredients, personal taste.
It turn out to be awesome my kids too skipped dinner and enjoyed this salad with us. This is must try recipe, best for parties too. Recipe can be altered according to choice. Now let's see how I made this simple yet yummy salad.
Ingredients:
- Corn Kernels - 1 Cup
- Pine- apple 1/2 Cup Finely Chopped
- Spring Onions - 1 Tblspn Finely Chopped
- Cheese - for topping (optional)
- Lettuce - For plating
- Butter - 1 tspn
I made 2 dressings for 1 salad I don't loke mayonise but my whole family loves it so added for them
Mayonise dressing (optional):
- Mayonise - 1 Tblspn
- Sugar - 1 Pinch
- Salt - 1 Pinch
- Mustard Powder - 1 Big Pinch
- Lime Juice - 4 drops
->mix and keep a side
Lemon Dressing:
- Lime Juice -1 Tbslpn
- Salt - 1 tspn
- Pepper Powder - 1 tspn
->Mix and keep it a side
Method:
- Saute sweet corn in 1tspn butter for few minutes. Let it cool once done.
- Now take a bowl, add sweet corn, spring onion, pine-apple, lemon dressing, mayo dressing, give a nice mix
- Arrange lettuce leaves , as a plate , place one serving sald in each leaf.
- Add grated cheese and serve.
